* To check if the caramel is set enough, dip a spoon into the caramel and place it in the fridge for a few minutes, or into a glass of ice water for a minute. Once it is cold, it should be set – If not, leave your caramel on for a little longer and test it again.

**Allulose is not substitutable for a set caramel. You can substitute it for another sweetener, but it will be more of a sticky caramel – Which is also delicious! If you are going to use another sweetener, add 1tsp of blackstrap molasses to help with the colour and help prevent crystallisation.
