This recipe makes 8 fritters and the macros are per fritter.
WHY SMALL ZUCCHINI / COURGETTE: The bigger a zucchini gets, the higher water content it has. Choosing smaller zucchini means your fritters won’t be soggy! That being said, you can totally use larger ones if that is what you have. Just add a little extra salt and let it sit for about an hour to help draw out the excess moisture.
