This keto sponge is light and fluffy, just like the real thing! Bake it in a tray and make myKeto Tiramisu, or fill it with whipped cream and roll it up to make a roulade.
With any sponge, be careful not to bang or knock the mix too much, or to play around getting it in the tin too much. Try for under 10 movements smoothing it in the tin. Otherwise you’ll knock out all the air and your sponge will be flat!
As a cake itself, the macros are worked out at 9 portions.
